I recently found my old iPod Classic and am trying to update the songs on it using the current iTunes for Mac, but I can't figure out how to even get iTunes to recognize the device. The iPod itself says that it's connected, and a USB file shows up on my desktop, but there's no indication in iTunes that anything is connected. Can I just not use this iPod anymore?

The iPod should still be supported. See If iTunes doesn't recognize your iPhone, iPad, or iPod - Apple Support.

I have the exact same issue! Not had problems until I downloaded the new itunes update 12.4.1.6 and now I can't upload new albums because my iPod classic is no longer appearing on itunes. So frustrating is it becoming incompatible or is this a bug? Don't tell me apple are trying to phase out ipods now.
I'm having the same problem. Running El Capitan on a Macbook Pro. The system sees the iPod Classic as a device in the system information USB connected devices. Finder also sees it and I can transfer files to the iPod and edit them. But iTunes doesn't see it. When first connected the iPod says it's syncing and iTunes pops up but it doesn't really sync and it doesn't show as a connected device in iTunes. I tried the suggestion to put the iPod into disk mode and it didn't make a difference. I can't say for certain that this started with 12.4.1.6 as it's been a while since I synced this iPod. My iPhone 6S works fine. Any ideas?
My ipod nano 5th gen has similar problem also. I can see the device connected in Finder but it is not shown on itunes. I'm using itunes 12.4.1.
Not that it solves the issue but my iPod nano 4th gen. is connecting properly with 12.4.1.6 on El Capitan, so I think this is an individual issue rather than a general problem.

I'm also having the same issues with my Ipod Classic 160gb
I plug it in and ejects only seconds and ejects.
No problem before the update
Did all the troubleshooting but, no dice on getting back up and running
